Tetilla is distinguishing by its unique cone shape and creaminess. The name "Tetilla" came from its appearance. It means "Teats". There are many small villages and farms in Galicia and they actively produce cow milk. By combination of superior milk attributed by rich pasture from coasty warm and humid climate and traditionally accumulated techniques, they produce very balanced cheese. Especially, Tetilla is reputed as the most milky and creamy cheese among Spanish cured cheeses.

San Simon is only produced at 9 villages in Lugo, eastern Galicia. Originally pasturage has been actively done in region and cheese production has been one of important industry. Some say Celt came and lived in this land started its production. It has been used as a product for dining of village people, and occasionally as a tax paid to aristocrat or monks.
Made from cow milk from rich land, aged in "Horreo" which is a unique high floored storage in Galicia, and smoked by regional unique birch tree.
Superior condensed milk brings rich and creamy taste and slight sourness.

Afuega'l Pitu is produced at 13 villages along surrounded-by-mountain rivers of Narcea and Nalon in central Asturias. It is reputed as the most fertile land and the cheese tastes cow milk grown in rich pastures.
The cheese which is said the oldest cheese in Spain is produced without pressing milk and with natural slow consolidation by extracting whey.
"Afuega'l Pitu" is a dialect in farming area of Asturias which means "Clog throat of chicken". It is based on old tale that at the time of forming of milk after removing whey, someone gave the milk to chicken and it resulted clog in throat of chicken.
It is a cheese by which you can enjoy combination of a couple of Asturias representing products, rich cow milk and sparkling apple liquor (Sidra).
A light scent of apple is filled in mouth. A harmony of rich cow milk and fruity Sidra brings simple but elegant flavor.
